Roast goose is one of the traditional roasted dishes of Guangzhou. The best geese are medium or small black geese from Qingyuan County. The actual preparation is a complicated process. First, the wings, feet and entrails are removed, then the goose is seasoned and boiled, cooled and seasoned again, and finally roasted over an open flame.
